Caprese Salad


Every month the Center Cafe highlights a new featured menu item and this month, as we get ready for the fall weather, is apples. All our culinary classes in September will feature apples recipes as well - from Apple Stuffed Pork Loin to Apple Cider Chicken to Tomato Apple Jam - it all sounds delicious!

For this month's newsletter, we wanted to stay on trend and are featuring a Caprese Salad with - you guessed it - apples!

Calories: 400 | Protein: 18g | Carbs: 55g | Total Fat: 13g | Yield: 2 servings

Ingredients:
3 ½ c. Roma tomatoes, cut in wedges
3 c. spinach, chiffonade
1 ½ c. red onion, julienne
1 c. basil, chiffonade
2 Tbsp. Italian parsley, chopped
1 Tbsp. garlic, minced
1 Tbsp. olive oil
2 Tbsp. balsamic vinegar
2 oz. skim fresh mozzarella, cut in strips
2 small apples sliced
2 slices whole grain bread

Directions:
Toss all together except bread and serve with a slice of whole grain bread.
