Orange and Banana Oatmeal Parfait

Looking for a new breakfast recipe for a fresh start to the new year? Look no further! Packed with protein, whole grains, fiber, and micronutrients, this oatmeal parfait will give you the fuel you need to tackle anything the day has in store for you!

Calories: 306 | Protein: 10g | Carbs: 60g | Total Fat: 4g | Yield: 6 | Serving Size: Approx. 1 cup

4 cups Oatmeal (quick-cooking)
3/4 cup low fat vanilla yogurt
1/2 cup skim milk
2 sliced bananas
1 each peeled orange sections
2 Tbsp. orange zest
2 Tbsp. honey

Prepare oatmeal according to recipe on package. Cool to refrigerator temperature. Mix in yogurt and milk until smooth and creamy. Oatmeal may be made a day ahead and chilled until ready for use.
Mix honey into oatmeal yogurt mixture. Portion 6 oz. into each cup. Top each parfait with 2-1/2 Tbsp. each of banana and diced orange and 1 tsp. orange zest.
