Catch of the Day: Grilled Shore Lunch
-1 lb fresh caught fish (walleye, pike, etc.) cut in long one inch wide strips
-1 tbsp black pepper
-1 tbsp coriander
-1 tsp kosher salt
-1 tbsp paprika
-1 tsp dried lemon peel
-1 tsp canola oil
-4 3-feet long cedar, maple or alder sticks sharpened to a point at one end.
Filet fish and prepare in strips. Toss in bag with spice blend and oil, coat evenly. Skewer seasoned fish strips on sharpened sticks, about 4 oz. each. Grill over open flame, turning regularly. Cook 3-5 minutes.
